Apio launches Eat Smart Ginger Bok Choy salad kit

Apio is introducing its new Eat Smart Ginger Bok Choy vegetable salad kit. The salad is available in 12-ounce bags nationwide and will be sold starting in April.

The salad contains six vegetables recognized for their nutritional value: sugar snap peas, carrots, Napa cabbage, broccoli, bok choy, and red cabbage. The vegetables are combined with roasted peanuts, included in a separate pack to add crunch and additional flavor, and a ginger dressing that brings out the taste of the vegetables.

“More than ever, consumers have healthy eating on their minds, and the Ginger Bok Choy Vegetable Salad is full of fresh, pre-cut and pre-washed vegetables that provide a delicious way to eat their superfoods,” said Cali Tanguay, Apio’s director of marketing and technology. “This new product joins Apio’s popular Sweet Kale Vegetable Salad Kit, which contains seven superfoods and is part of our restaurant-inspired Gourmet Selections line.”

“Superfoods” are nutrient-rich foods that typically contain phytochemicals, which are believed to promote health. Glucosinolates, found in cruciferous vegetables such as broccoli, bok choy, kale, Napa cabbage, and red cabbage—the primary ingredients in the Ginger Bok Choy and Sweet Kale Salads—are phytochemicals that can stimulate the body’s own natural antioxidant systems. Cruciferous vegetables have been acclaimed for their healing properties since the days of the Roman Empire.
