FDA releases updated handbook on causes of foodborne illness

The FDA has released the second edition of its “Bad Bug Book,” its handbook to foodborne pathogenic microorganisms and natural toxins.

Published by the FDA’s Center for Food Safety and Applied Nutrition, U.S. Department of Health and Human Services, the book provides current information about the major known agents that cause foodborne illness.

Information in the handbook is presented in everyday terms and is general in nature. It is intended for practical use, and not to be a comprehensive scientific or clinical reference.

Each chapter covers a pathogen or natural toxin that can contaminate food and cause illness. There is also some scientific and technical information about the major pathogens that cause the illnesses. Separate “consumer boxes” in each chapter provide the non-technical information, describing plainly what it is that makes people sick, and how to prevent it.
