FDA updates guidance docs for juice hazards, low-acid canned foods

The U.S. Food and Drug Administration (FDA) has updated three guidance documents for food producers covered by the FDA’s regulations.

They are for Juice Hazard Analysis and Critical Control Point (HACCP)Seafood HACCP, and Low-Acid Canned Foods to explain the connection between the FDA Food Safety Modernization Act (FSMA) regulations and pre-FSMA regulations.

In 2017, the FDA published these guidances to help producers of food commodities covered by pre-FSMA regulations understand which parts of the FSMA regulations apply to them and how the FSMA regulations may affect their operations. Updates to each guidance include deletion of the reference to compliance dates, as they have all passed, and new questions and answers about central kitchens and transportation caterers have been added to the guidances on Seafood HACCP and Juice HACCP.
