New FAM cutting machine for wavy fries

FAM has introduced the new FAM Tridis 240P, designed especially for the frozen fries industry.

“The Tridis 240P has been tested and approved in cooperation with prominent Flemish frozen companies, and LWM,” said Niels van Laer from FAM. He explained that the machines in the factory will process potatoes into wavy fries, both regular and deep wavy, every day. “This cut is better-known as Ziggy Fries by the consumers, it is a very crunchy fry with a structured outer side and soft substance on the inside.”

The geometry of the slicing knife was optimized to produce a cleaner first cut and then the product is guided meticulously through the circular and crosscut knife spindles leading to a precise cut and higher yield with less slivers and fines, according to FAM. The capacity of the FAM Tridis 240 was increased by running at a higher velocity and by reducing the cutting zone length. By moving the cutting tools closer together and decreasing the transit time of the product, capacity was raised without compromising on cut quality, according to the company. Depending on the product and the cut size, the FAM Tridis 240 has an increased capacity of 10 percent to 40 percent compared to other machinery in the industry, the company said.

The FAM Tridis 240P stands out because of its sliding electrical case, “which offers easy access to the drive and because of its pattern system for dismantling the axles and bearings,” said van Laer. “Besides cutting quality, it is therefore also important that the machine can be easily maintained.”

The machine has an open frame with only slant surfaces and no visible wires or hidden corners, according to the company.
